Cook of the Week Recipes

David Rowan of New Albany shares some of his favorite recipes:

Grilled Chicken Halves
1 cup canola oil
3 cups apple cider vinegar
1 tablespoon garlic salt
1-8 cup crushed red pepper
8 chicken halves
Combine oil, vinegar, garlic salt and crushed pepper in a saucepan and bring to a boil. Keep at rolling boil for 5 minutes. Use a grill mop to spread mixture on chicken halves. As chicken cooks, continue to turn and mop with mixture. Cooking time is determined by size of chicken.

Smoked Chicken
1 cup Italian dressing
1-3 cup Dale's seasoning
10 chicken breasts, with skin
Seasoning salt
Combine dressing and Dale's and brush on chicken. Sprinkle chicken with seasoning salt. Pour any remaining mixture into the pan of water under chicken in the smoker. Cook over medium heat for about 5 hours. Add more water to pan and hickory chips and cook for 2 more hours.
