Coconut Pie
21⁄4 cups milk, divided
2 tablespoons margarine
5 tablespoons all-purpose flour
1⁄2 cup sugar
3 eggs yolks
1 teaspoon pure vanilla extract
1 cup shredded coconut
1 (9-inch) pie crust, baked
Meringue
3 egg whites
1⁄4 teaspoon cream of tartar
3 tablespoons sugar
1⁄4 cup shredded coconut
Heat 2 cups milk and margarine in a heavy saucepan. Do not boil.
Sift together flour and sugar.
Beat egg yolks with remaining 1⁄4 cup milk and add vanilla. Add egg mixture to flour mixture. Add this mixture and coconut to the hot milk mixture in the saucepan and stir while cooking until thickened. Pour into a baked pie crust.
Beat egg whites with cream of tartar until stiff peaks form. Add sugar and beat again. Spread meringue on top of pie. Sprinkle with coconut and bake at 350 degrees until brown.
Chocolate Pie

Old-Timey Tomato Soup
1 quart tomatoes, diced
21⁄2 cups water, divided
1 medium onion, chopped
Salt and pepper
2 tablespoons cornmeal
1 heaping tablespoon all-purpose flour
Put tomatoes, 2 cups water and onion in a large saucepan. Season with salt and pepper to taste. Cook until onion is tender. Stir together cornmeal, flour and remaining 1⁄2 cup water. Add to the tomatoes and simmer until ready to serve. The soup will not be thick.

Barbecue
2 pounds ground beef
1 chopped onion
1 small bottle hot ketchup
1⁄2 cup brown sugar
3 tablespoons vinegar
Brown meat and onion. Drain off grease. Add ketchup, sugar and vinegar to meat mixture. Simmer 15 to 20 minutes. Serve on hamburger buns.

Broccoli Soup
4 cups water
2 small potatoes, cubed
1 medium onion, chopped
2 medium carrots, chopped
1 tablespoon salt
1⁄2 teaspoon pepper
2 cups broccoli
1 cup cauliflower
1 can reduced-fat cream of mushroom soup
4 tablespoons margarine
1⁄2 cup milk
6 ounces Velveeta, cubed
Place water, potatoes, onion, carrots, salt and pepper in a Dutch oven and cook until vegetables are tender. Add broccoli and cauliflower. Add soup, margarine, milk and cheese. Simmer until ready to serve.

Zucchini Bread
2 eggs
1⁄2 cup oil
1 cup sugar
1 cup crushed pineapple, drained
1 cup grated zucchini
1 teaspoon vanilla
2 cups all-purpose flour
3⁄4 teaspoon cinnamon
1⁄2 teaspoon salt
1⁄2 teaspoon baking powder
1 teaspoon baking soda
1⁄4 teaspoon nutmeg
1⁄2 cup chopped nuts
Beat eggs with oil and sugar. Add pineapple, zucchini and vanilla and mix well. Sift together flour, cinnamon, salt, baking powder, soda and nutmeg and add to batter. Fold in the nuts. Pour batter into a greased and floured loaf pan. Bake at 350 degrees for 1 hour.

Georgia Pecan Pie
4 ounces cream cheese, softened
3⁄4 cup powdered sugar
8 ounces Cool Whip
1 cup pecans
2 tablespoons butter
1 pie crust, baked
Caramel ice cream topping
Combine cream cheese, sugar and Cool Whip. Toast pecans in butter. Pour cream cheese mixture into baked pie crust. Top with pecans and drizzle with caramel topping. Freeze. Let thaw enough to slice.

Fresh Apple Cake
2 eggs
2 cups sugar
11⁄4 cups oil
1 teaspoon vanilla
21⁄2 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon salt
1 cup chopped pecans
3 cups chopped apples
Combine eggs, sugar, oil and vanilla. Sift together flour, baking powder, baking soda and salt. Add to egg mixture. Then add nuts and apples. Pour batter into a 9×13-inch baking dish and bake at 350 degrees for 50 to 60 minutes.
