I was reading a column by Heloise the other day and she was talking about summertime being burger season. She suggested different ways to change up the ho-hum hamburger, and one of those ways was to add taco seasoning to the meat.
I was intrigued by this idea because it combines two of our favorite meals: burgers and tacos.
Heloise didn’t say how much of the seasoning to add to the meat, but I figured that since you add a packet to a pound of ground beef, you’d add a packet to a 19-ounce package of ground turkey (of course, you could also do ground beef).
These turned out to be delicious and what a nice change! I served them with corn on the cob cooked in the microwave (4 minutes per ear cooked in the husks) and the meal could not have been more perfect or easy.
The quick dinner also provided us more time to play with our new household addition, Murry Smalls, a tabby kitten who was sitting in our carport when we arrived home from vacation last week, looking like he owned the joint.
We have to believe someone left the kitten on purpose: He was friendly, litter-box trained and flea-free. He will make his first trip to the vet this week for a checkup, shots and neutering.
Our 11-year-old yellow cat, Bob, is slowly warming up to Smalls. At first, there was a lot of hissing and growling, but we’ve now come to the point where the two can be in the same room together without a fight breaking out.
It’s been quite a while since we’ve had a kitten in the house; you forget what they’re like. Everything is a toy to them … eyeglasses, newspapers, pens, feet, flower arrangements. They play and play and play, and then they turn around and fall fast asleep – not unlike toddlers.
We’ll probably be having more fast meals before school starts so we can enjoy having a kitten around while he’s still at this fun stage, before he grows up and hits his surly teen years.
1 package lean ground turkey
1 packet reduced-sodium taco seasoning
4 slices Pepper Jack cheese
4 whole wheat hamburger buns
Combine ground turkey with taco seasoning packet and mix well. Form into 4 patties and grill to desired doneness. Add sliced cheese at the last minute and allow it to melt. Place burgers on buns that have been slathered in sour cream and top with lettuce, salsa and avocado slices.
