Cream Cheese Party Ball
2 (8-ounce) blocks cream cheese, softened
14 cup chopped onion
14 cup chopped bell pepper
14 cup crushed pineapple, drained
1 teaspoon seasoned salt
2 cups chopped pecans, divided

Combine softened cream cheese, onion, bell pepper, pineapple, seasoned salt and 1 cup chopped pecans. Form into a ball and roll in remaining 1 cup chopped pecans. Refrigerate overnight. Serve with crackers.

Hush Puppies
3 cups self-rising corn meal
12 cup self-rising flour
2 large onions, chopped
2 eggs
12 cups buttermilk
12 cup water
Salt and pepper
1 tablespoon oil
Oil for frying

Combine all ingredients (except oil for frying) in a large bowl. Cover and let rise for 15 minutes. Drop by rounded spoon in hot oil and cook until golden brown. Drain hush puppies on paper towels and serve warm.

2 cups self-rising flour
12 cup sugar
1 envelope rapid rise yeast
2 tablespoons warm water
Oil for frying
3 cups powdered sugar
2 tablespoons milk
12 teaspoon vanilla flavoring
Combine flour, sugar, yeast and warm water in a bowl. Cover bowl with a plate and let dough rise for 2 hours. Pour out onto a floured surface and roll dough out thinly. Cut in squares and fry in oil until golden brown. Combine powdered sugar, milk and vanilla. Dunk each beignet in frosting while they’re hot.

Caramel Ice Cream Pies
1 stick butter or margarine, softened
1 (16-ounce) bag flaked coconut
1 cup chopped pecans
1 (8-ounce) block cream cheese, softened
1 can sweetened condensed milk
1 (16-ounce) container Cool Whip
2 graham cracker crusts
1 (12-ounce) jar caramel ice cream topping

In a large skillet, melt butter. Add coconut and pecans. Cook until golden brown on medium heat, stirring constantly. Set aside and let cool.
Combine cream cheese, sweetened condensed milk and Cool Whip and beat until smooth. Divide mixture evenly between 2 graham cracker pie shells.
Spread coconut mixture over cream cheese mixture. Pour caramel ice cream topping over coconut topping. Freeze for 6 to 8 hours before serving.
Makes 2 pies.

Coca-Cola Cake
2 cups self-rising flour
2 cups sugar
2 sticks margarine or butter
3 tablespoons cocoa powder
1 cup Coca-Cola
12 cup buttermilk
1 tablespoon baking soda
2 eggs, beaten
1 tablespoon vanilla flavoring
14 cups miniature marshmallows

1 stick margarine or butter
3 tablespoons cocoa powder
6 tablespoons Coca-Cola
1 box confectioner’s sugar
1 cup chopped pecans

Combine flour and sugar in a bowl. Heat margarine, cocoa and Coke to the boiling point and pour over flour mixture. Add buttermilk, baking soda, eggs, vanilla and marshmallows. Batter will be thin and marshmallows will float on top. Pour batter into a greased and floured 9×13-inch baking dish. Bake at 350 degrees for 30 minutes.
For the icing, combine margarine, cocoa and Coke and heat to boiling. Pour over confectioner’s sugar and beat well. Add pecans and spread on cake while cake is still hot.
Chocolate Gravy
112 cups sugar
23 cup self-rising flour
23 cup cocoa powder
2 cups water
12 stick butter
12 teaspoon vanilla
Combine sugar, flour and cocoa until blended, then add water. Cook on medium heat, stirring constantly until thick. Remove from heat and add butter and vanilla. Serve over biscuits.

Spoon Rolls
1 envelope active dry yeast
1 teaspoon sugar
2 cups lukewarm water
4 cups self-rising flour
12 sticks butter, melted and cooled
14 cup sugar
1 large egg, lightly beaten
Pinch of salt

Combine first 3 ingredients in a large bowl; let mixture stand 5 minutes. Stir in remaining ingredients until blended. Spoon into muffin pans coated with cooking spray, filling them 2⁄3 full. Bake at 400 degrees for 20 to 25 minutes or until golden brown.

Chocolate Chip Pound Cake
1 box Duncan Hines butter cake mix
1 small box instant vanilla pudding
1 cup sour cream
4 eggs
1 cup vegetable oil
14 cup water
1 teaspoon vanilla
1 (12-ounce) package chocolate chips

Combine cake mix, pudding mix, sour cream, eggs, oil, water and vanilla in a large bowl and beat with a mixer. Fold in chocolate chips. Pour batter into a greased and floured Bundt pan and cook at 350 degrees for about 1 hour, or until done.
