TUPELO – Easter’s just around the corner, which means cooks all over Northeast Mississippi will be preparing meats like ham and lamb for the dinner table.
And while they are delicious, both ham and lamb can be a bit higher in fat and calories than say, turkey, which is what my mother always made at Easter.
So if you do plan to indulge a bit in the protein department, you can at least prepare healthful side dishes to go with your meal.
These four recipes – Baked Corn Pudding, Savory Asparagus, Red and Green Beans and Rosemary Red Potatoes – are all simple to prepare and stunning to boot.
The two starches cook in the oven while the two green vegetables are prepared on the stovetop, so there’s plenty of time to make any or all of them. (The corn was my family’s favorite.)
Now, all you have to do is whip up some Deviled Eggs and you’re all set.
