Thanks to all you nice readers who’ve asked me about my fabulous pound cake recipe.
It’s only “mine” because it’s in my possession. Actually, I seem to recall it’s the recipe my railroading father used when he made pound cake.
I think I clipped it out of a McComb newspaper cooking edition produced by my mother as its family page editor.
As I mentioned recently, I baked it during Christmas and realized how wonderful it is. Then it was my pleasure to make one for a very kind man who helped me with a roof leak.
I also posted it on Facebook and got some comments including from one good McComb cook, who said she also bakes that recipe.
Obviously, it comes highly recommended, and so I’m offering it to you to spread the joy.
• Sour Cream Pound Cake
(This takes 2 bowls, in addition to your mixer bowl.)
With your electric mixer, cream 2 sticks softened oleo, slowly add 3 cups sugar.
Then add 6 eggs, one at a time, beating well after each addition.
Stir in 1 cup sour cream, 1 teaspoon vanilla (you can add lemon extract also if you like), dash of salt. Mix until light and fluffy.
In a separate bowl, measure 3 cups all purpose flour, add 1/4 teaspoon soda. Sift and twice resift. (This is where the second bowl comes in – I measure and sift into one bowl, then “move” the dry mixture through the sifter into the other bowl.)
Into your mixer mixture, add dry ingredients 1/2 cup at time, beating constantly.
Pour into well-greased and floured (love the spray-can kind) 10” tube pan. Bake 75 minutes in 325 oven.
Remove from oven, let cool 30 minutes before trying to take it out of pan.
I take a large plate, put it on top of the cake pan then flip the pan so the plate is on the bottom. Then, I lift the pan from the cooling cake and put the cake right-side up on a wire rack until it’s completely cool.
(Recipe says it will freeze well, but I can’t imagine it lasting that long. If you do, though, wrap in several layers plastic wrap, then a final layer of aluminum foil.)
And now, for something completely different.
My confession: I refused to watch Oprah and Lance Armstrong last week.
Oh, sure, some of you missed her two nights of interviews with perhaps one of the greatest hoaxsters of the 21st century, but it is still a very young century. Granted, not everybody follows Oprah’s OWN network, the phrase being redundant like PIN number.
My long life has brought me into fairly frequent contact with liars, especially sociopaths and narcissists, and frankly, I try to avoid them unless it’s for work purposes.
Lyin’ Lance appears to be both of those “flawed” character types – somebody who believes himself the center of all universes and cares not one whit for its rules.
Now they tell me some idiot plans a Lance Armstrong movie. Oprah’s OWN lineup is so weak that perhaps she’ll seek to broadcast its premiere, which I too will not watch.
I’m not so rigid about Katie Couric’s interview today with poor Notre Dame footballer Manti T’eo, who somehow fell in love with a non-existent woman.
I think I’ll just stick with the pound cake and not worry about these disturbed men.
