I tucked these away in a cabinet at home and promptly forgot about them - until Sunday.
I woke up before church craving two things: salmon and fajitas (an odd combination, I know). Fajitas won the coin toss.
But instead of pulling out a seasoning packet for fajitas, where you just add water, I opted for the McCormick spice package.
I wasn't too sure about the orange juice, but I followed the instructions to the letter and the fajitas were quite good. They would have been excellent had I cooked them in a cast iron skillet instead of a nonstick frying pan.
Next time, I'll know better.
I served these with fat-free refried beans, baked Scoops and picante sauce.
Garlic Lime Chicken Fajitas
1/4 cup lime juice
1/3 cup orange juice
2 tablespoons olive oil
1 package McCormick Recipe Inspirations for Garlic Lime Chicken Fajitas (premeasured spices and recipe card)*
1/2 teaspoon salt
11/2 pounds boneless, skinless chicken breasts, cut into thin strips
1 medium red or green bell pepper, cut into thin strips
1 medium onion, thinly sliced
8 (8-inch) flour tortillas
Mix juices, oil, all of the spices and salt in a small bowl. Reserve 1/4 cup of marinade. Place chicken in a large resealable plastic bag or glass dish. Add remaining marinade; turn to coat well. Refrigerate 30 minutes or longer for extra flavor.
Cook and stir chicken in a large heated skillet on medium-high heat 3 minutes or until lightly browned. Remove from skillet. Add bell pepper, onion and reserved marinade; cook and stir 5 minutes or until tender. Return chicken to skillet. Cook 2 to 3 minutes or until heated through.
Spoon chicken mixture onto warmed tortillas. Serve with assorted toppings, if desired.
* If you can't find the spice package for Garlic Lime Chicken Fajitas in the spice aisle at your grocery store, here are the ingredients: 1 teaspoon minced garlic, 1 teaspoon minced onions, 3/4 teaspoon ground cumin, 3/4 teaspoon oregano leaves, 1/2 teaspoon cilantro leaves and 1/2 teaspoon coarse ground black pepper.
